I know, I know, MORE pancakes… but there’s no such thing as too many pancakes right? Anyway, this year the greatest holiday/celebration (Pancake Day/Shrove Tuesday) falls the day before Valentines so I thought it’d be rude not to combine the two somehow as what could possible show true love more?
I used the same recipe for the pancakes as from my American Pancakes with Yoghurt, Honey & Berries post, but this time made up a simple glacé icing to pour in between and on top, with plenty of valentines sprinkles to finish it off. My favourite thing about this sweet treat is that glacé icing is super easy to make and I’ve just popped the ingredients and method for this below.
- 225g (8oz) icing sugar
- 2-3tbsp boiling water
- Sift the icing sugar into a bowl.
- Use a wooden spoon to gradually stir in enough water until the mixture is the consistency of thick cream. Beat until it’s thick enough to coat the back of the spoon (you can always add in some colouring as well, but I just left mine plain).
- Use immediately.
Once you’ve made your pancakes (recipe here) you simply create the stack, securing each layer with a spoonful of icing and then add as many sprinkles as your heart desires. Next, surprise your valentine or just keep all for yourself, as there’s no greater love than that of pancakes.
